from prep to finish - a one hour meal that is soo flavorful and yummy. i eyeballed measurements when i made this so ~ adjust as needed ~ this recipe is very adaptable!!
1/2 pound boneless + skinless chicken thighs
6-7 ounces of andouille sausage (appx 2 sausage links, i use the trader joes smoked chicken andouille)
15-20 peeled + deveined shrimp
* you can easily just omit anything you don’t wanna use, or just do it without protein in the pasta and pair it with a blackened salmon or piece of chicken idk
seasonings for the shrimp and chicken:
*disclaimer, no measurements, u just season until they look well seasoned?? easy on the salt tho
2 medium sized bell peppers (i used orange and yellow) cut into 1 cm thick slices
1 cup of cherry tomatoes, chopped (i used baby heirloom tomatoes , so colorful, so fun!)
1/4 of a sweet onion, chopped finely
1/2 stalk of celery, also chopped finely
5 cloves of garlic, minced
1/2 box of linguine or fettuccine pasta
slice andouille sausage into 1/2 cm thick slices
season your chicken and shrimp
while chicken and shrimp are slightly marinating, prep your veggies!
in a pan, on medium high heat preheated olive oil, cook your chicken thighs thoroughly
once chicken is cooked, remove chicken and set aside, then add your shrimp + andouille sausage
in a big pot - cook your pasta. HOWEVER do not fully boil the pasta (i let it boil for 4 mins?)
remove shrimp and sausage once cooked (/sausage has some color)
in the same pan (with the oil that is infused with chicken fat and flavor) add in your: peppers, celery, and onions
once your onions start to turn translucent, add in your tomatoes
once your tomatoes begin to blister and peppers soften, add minced garlic, dried oregano, basil, cajun seasoning and tomato paste and let simmer for 2-3 minutes
stream in chicken broth + half and half and stir, it should be simmering
add in 1/4 cup of grated parm and stir until its incorporated into the sauce
add in your par-cooked pasta and pasta water
stir then add in the protein you set aside
once pasta is al dente or to your liking, add in the rest of the parm and spinach
stir and let simmer until spinach is wilted
top with parsley and enjoy!!
