Nutritional Importance of Amaranth
Protein
Amaranth contains large amounts of protein, up to 30% more than wheat flour, rice and oats. The protein contained in amaranth is also unusually complete when compared to other plant sources containing a complete set of amino acids. Therefore, different sources to obtain the recommended daily dose of protein are not needed.
Amaranth contains anywhere from 15-17% protein by weight. It is rich in the amino acids lysine, methionine, and cysteine.
It has the highest content of lysine than any other grain.
Dietary Fiber
Dietary fiber and essential amino acids, including lysine, which has clinically shown potential for cancer treatment, are prominent in amaranth. High in fiber with three times the fiber of wheat.
Vitamins & Minerals
In terms of nutrition, amaranth is loaded with vitamins and minerals. It has more than 20% of the recommended daily amount of vitamins & minerals.
It is high in iron, protein and has three times the calcium of milk.
Amaranth has twice the iron as wheat does; though vegetarian sources of iron are generally difficult to absorb. National Academy of Sciences recommended it as part of a healthy, diverse diet.
Amaranth is highly vitamin-rich and is a good source of vitamin A, vitamin B6, vitamin K, vitamin C, folate and riboflavin.
Amaranth includes numerous minerals such as calcium, potassium, iron, copper, magnesium, phosphorus and especially manganese.
