The classic Italian cocktail gets reinvented as a tiny, deliciously dangerous jello cube...
Traditional Sgroppino's call for Lemon Sorbet, Prosecco or Champagne and Vodka served in a champagne glass. I'm throwing a NYE party and wanted a fun ( and addictive) jello shot to serve that wasn't cheesy, bland or over-played, so I decided to incorporate the ingredients from this classic cocktail, into a fun and easy-to-serve jello cube. Expect a tart, yet sweet taste without the sting of (cheap) vodka and prepare for a lot of bubbly party goers with this really easy recipe.
INGREDIENTS
Makes 36 cubes
1 1/2 cups Prosecco
1 cup frozen lemonade concentrate
1/2 cup water
4 envelopes plain gelatin
1 cup vodka
DIRECTIONS
1. Pour Prosecco, lemonade concentrate and water into a small saucepan on low heat
2. Sprinkle with gelatin and stir until fully dissolved (appx. 2 min)
3. Remove from heat and stir in vodka
4. Pour into a 6x6 pan (metal or glass) and refrigerate at least 1hr
5. After the jello has set, sprinkle sugar on top and cut as desired
NOTE: Once cubes are out of the refrigerator, they will begin to soften quickly! Try small servings, passed with festive toothpicks (as pictured).
