The crumbly buttery crust and sweet-tart raspberry filling in these raspberry crumb bars make them a treat. Great for a quick snack or dessert!
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, cold and cubed. 1 egg. 1 teaspoon vanilla extract. 1 1/2 cups fresh raspberries. 1/4 cup granulated sugar. 1 tablespoon cornstarch.
Instructions: Preheat oven to 375F 190C. Grease an 8x8 inch baking pan. In a mixing bowl, combine flour, sugar, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs. Beat egg and vanilla; add to crumb mixture, stirring until combined. Press two-thirds of the mixture into the bottom of the prepared pan. In another bowl, gently mix raspberries, sugar, and cornstarch until raspberries are coated. Spread raspberry mixture over crust in the pan. Crumble remaining dough over the raspberry layer. Bake for 35-40 minutes or until lightly browned. Cool completely before cutting into bars.
