My oven's been acting up for awhile. A few times, it just kind of stopped working all together. I tried turning the oven on and off. I tried kicking the door and banging on the stovetop. I tried words of profanity encouragement. They were all met with varying degrees of success. So of course, I went about my business as if things were all just perfectly status quo.
And then one night last week, my oven went completely dead cold. It also started emitting a faint and tad bit disturbing smell of gas. And just to set the scene further, it was 11:30, I had just finished packing for a long weekend at the beach, and I was about to cook a $30 piece of steak for the certain special and hungry someone sitting in my living room. Things really do always pick the best times to break down.
Luckily, I got a brand-spanking clean and working oven delivered less than a week later. It's so fancy that it even has a special timer to let me know when it's done preheating. My head was FULL of all the deliciousness I'd be baking and making and cooking in it. And yet know what I made for dinner that night?

Ingredients (makes 1 - 2 servings)
1 and 1/2 cup of snap peas
1/2 cup radishes (about 5 - 6 small ones)
1 tablespoon of mint leaves
juice of 1 lemon
2 tablespoons of olive oil
shaved parmesan or pecorino, or crumbled goat or feta cheese (optional)
salt and pepper to taste
Make the salad:
Remove the peas from the pods, and then slice the pods thinly. Cut the ends off of the radishes and slice them thinly as well. Chop the mint into thin strips.
In a small bowl, whisk together the olive oil, lemon juice, salt and pepper into a dressing.
Toss the peas, pea pods, radish slices and mint leaves together in a bowl with the dressing. Top with the shaved or crumbled cheese, if using, and eat immediately.
