Cucumbers, cherry tomatoes, red onion, chickpeas, parsley, lemon juice, black sesame seeds, and olive oil over a bed of mixed greens.
Fully stocked fridge + meal prep 😎 I prepped some quinoa salads, extra quinoa, Israeli salad with chickpeas (great snack on its own but with some mixed greens it makes a good lunch and with some quinoa it could be a nice light dinner), my favorite lentil soup, and homemade instant oatmeal packets.

I’ve been slacking lately so tomorrow it’s strict planning and yoga 😬
All of the food I plan to eat is homemade and vegan :) I’ll also throw in a 1oz portion of fruit and nut mix in case I get too hungry at school. I fill my salads with beans and tofu and veggies so I’m not starving after an hour.
I also take a muti vitamin every morning with a probiotic. Every other night I take a magnesium pill. I would recommend an enzyme probiotic to people transitioning to a plant based diet because it helps your digestion system to adjust and feel easier.
