Instructions: Preheat your oven to 325F 163C. In a mixing bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch 23 cm springform pan to form the crust. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Fold in the sour cream and heavy cream until the mixture is creamy and smooth. Pour the cheesecake batter over the crust in the springform pan, spreading it evenly. Bake in the preheated oven for about 45-50 minutes or until the edges are set, but the center is slightly jiggly. Turn off the oven and crack the oven door slightly. Let the cheesecake cool in the oven for 1 hour. Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight to set.
