This shortcut ricotta gnocchi is a quick and healthy alternative to traditional potato gnocchi. With just a few ingredients and minimal prep, it's perfect for a cozy weeknight dinner.
Ingredients: 1 cup ricotta cheese. 1/2 cup grated Parmesan cheese. 1 large egg. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon garlic powder. 3/4 cup all-purpose flour. Marinara sauce, for serving. Fresh basil leaves, for garnish.
Instructions: Put the egg, salt, pepper, garlic powder, ricotta cheese, and Parmesan cheese in a bowl and mix them together. Mix in the flour little by little until a dough forms. Roll the dough into ropes that are about 1/2 inch thick on a floured surface. To make ridges, cut the ropes into 1-inch pieces and press them gently with a fork. Heat up some salty water in a pot. It will take about two to three minutes for each batch of gnocchi to float to the top of the water. With a slotted spoon, take the gnocchi out of the pot and put them on a plate to serve. Add fresh basil leaves on top and serve with marinara sauce. Have fun!
