My garden was mostly a bust this year. Except for these Roma and San Marzano tomatoes. And basil. So I made some sauce. The sauce on spaghetti? Awesome. The sauce on pizza? More than awesome! I am definitely growing more of these varieties next year. Here’s how I made the sauce: heat 2 tablespoons of olive oil in a deep sauté pan. Add one chopped large onion and cook over medium heat for about 3-4 minutes or until the onion has softened. Add 2 chopped cloves of garlic and cook for another minute. Add 16-18 chopped Roma/San Marzano tomatoes and 2-3 tablespoons chopped fresh basil. Sprinkle with salt. Cook for about 15-18 minutes or until the tomatoes are soft. Makes about 3 cups.
