Ingredients: 1 1/4 cups gluten-free all-purpose flour. 1/2 teaspoon salt. 1/2 cup unsalted butter, cold and cubed. 1/4 cup ice-cold water. 1 tablespoon apple cider vinegar. 1 egg optional, for egg wash.
Instructions: In a bowl, combine the gluten-free all-purpose flour and salt. Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs. In a separate small bowl, mix the ice-cold water and apple cider vinegar. Gradually pour the liquid mixture into the flour and butter mixture, stirring with a fork until the dough comes together. If it's too dry, add a little more ice-cold water, a teaspoon at a time. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes. Preheat your oven to 375F 190C. Roll out the chilled pastry dough on a lightly floured surface to your desired thickness. Use the rolled-out dough to line a pie dish or use cookie cutters to cut out shapes for individual pastries. If desired, beat the egg and brush it over the pastry for a golden finish. Bake in the preheated oven for 12-15 minutes or until the pastry is golden brown. Remove from the oven and let it cool slightly before using in your favorite pastry recipe or filling with your choice of sweet or savory fillings.
