Just the last Thursday of the year in my kitchen…I did a chicken bake with marinated chopped chicken, colored peppers, garlic, yellow onions, shallots, spinach, red sauce with ricotta, basil, Italian flat-leaf parsley, mozzarella and Parmigiano Reggiano. I made too much, but then, I married a guy with a huge appetite (and a deep admiration for my cooking!)!! It’s so delicious and hearty plus full of vitamins and protein.
