At least in our home, kids are finishing finals or heading into them, and there always seems to be a lot of stress and challenges that surface before summer officially arrives. But when I look at the glorious wings of the red and black one or the navy blue one which I’ve never seen before as they flutter around the exhibit, all my cares melt away like ice cream 🍨 in the sun. And in one golden second I am struck with wonder. Then I look down and one alights up on me and wants to walk around and share the moment. Somehow I feel so very special to have these little creatures close by. It must be like an angel’s breath or a hello from someone already in heaven. Ingredients: 2 ripe avocados. 2 large cucumbers, peeled and chopped. 2 ears of corn, grilled and kernels removed. 1/2 cup fresh cilantro leaves. 4 cups vegetable broth. 1/2 cup plain Greek yogurt. 1/4 cup fresh lime juice. 2 cloves garlic, minced. Salt and pepper to taste.

Instructions: In a blender, combine avocados, cucumbers, grilled corn kernels, cilantro, vegetable broth, Greek yogurt, lime juice, and minced garlic. Blend until smooth and creamy, adding more vegetable broth if necessary to reach your desired consistency. Season the soup with salt and pepper to taste. Chill the soup in the refrigerator for at least 1 hour before serving to allow the flavors to meld. Serve the chilled cucumber avocado soup garnished with additional cilantro leaves and grilled corn kernels if desired. Enjoy your refreshing and healthy summer soup!

Ingredients: 8 oz gluten-free pasta. 1 cup cherry tomatoes, halved. 1 cup fresh mozzarella balls, halved. 1/4 cup fresh basil leaves, thinly sliced. 2 tablespoons extra virgin olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.

Instructions: Follow the directions on the package to cook gluten-free pasta. Run cold water over the drain and rinse. Put cooked pasta, cherry tomatoes, mozzarella balls, and basil leaves in a large bowl. Add olive oil and balsamic vinegar on top. Add pepper and salt. Toss gently until everything is well mixed. A delightful and easy-to-make parfait that combines the sweetness of berries, the creaminess of yogurt, and the crunch of granola. Perfect for a romantic Valentine's Day dessert!

Ingredients: 1 cup strawberries, diced. 1 cup raspberries. 1 cup vanilla yogurt. 1 cup granola. 1/2 cup dark chocolate chips. 1 tablespoon honey. Fresh mint leaves for garnish.

Instructions: Put two tablespoons of granola at the bottom of each serving glass or bowl. Vanilla yogurt should be put on top of the granola. Add a layer of cut up strawberries and raspberries on top of the yogurt. Do this again and again until the glass is almost full. Pour honey over the top and sprinkle dark chocolate chips on top to finish. Add some fresh mint leaves as a garnish. Do this again and again for each parfait. Put it in the fridge for at least 30 minutes before you serve it. Your Valentine's Delight Parfait is ready to be served cold.
