Ingredients: 2 3/4 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon baking powder. 1 cup unsalted butter, softened. 1 1/2 cups white granulated sugar. 1 egg. 1 teaspoon vanilla extract. 1/2 teaspoon almond extract. 3 tablespoons buttermilk. Zest of 2 limes. Freshly squeezed juice of 2 limes. Green food coloring optional. 3 cups powdered sugar.
Instructions: Before you start cooking, heat the oven to 375F 190C. Whisk flour, baking soda, and baking powder together in a medium-sized bowl. Melt the butter and mix it with the sugar in a separate large bowl until the mixture is light and fluffy. Add the buttermilk, egg, vanilla extract, almond extract, lime zest, and lime juice and beat until everything is well mixed. If you want the cookies to be a light green color, you can add a few drops of green food coloring to the wet ingredients. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. Put the cookie dough in the fridge for at least 30 minutes with the lid on. Drop dough into round balls on a baking sheet lined with parchment paper using a cookie scoop or a tablespoon. For 8 to 10 minutes, or until the edges are just beginning to turn golden. Let the cookies cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way. Whisk the powdered sugar and just enough lime juice together in a bowl until you get a thick frosting that you can still spread. Put some fresh key lime frosting on top of each cookie after it has cooled all the way down. If you want, you can add more lime zest or slices of lime as a garnish.
