Feel at ease with the flavors of lasagna in the form of a hearty soup. Ground beef, tomatoes, and Italian spices make up this cheesy lasagna soup. Ricotta, mozzarella, and Parmesan cheeses are sprinkled on top to make it extra tasty.
Ingredients: 1 lb ground beef. 1 onion, diced. 3 cloves garlic, minced. 1 can 28 oz crushed tomatoes. 1 can 14 oz diced tomatoes. 6 cups beef broth. 1 cup water. 2 tsp dried oregano. 2 tsp dried basil. 1/2 tsp salt. 1/4 tsp black pepper. 1/4 tsp red pepper flakes optional. 1 cup lasagna noodles, broken into pieces. 1 cup ricotta cheese. 1 cup shredded mozzarella cheese. 1/2 cup grated Parmesan cheese. Fresh basil leaves for garnish.
Instructions: In a large pot, brown the ground beef over medium heat. Add diced onion and minced garlic, cook until onion is translucent. Stir in crushed tomatoes, diced tomatoes, beef broth, water, oregano, basil, salt, black pepper, and red pepper flakes. Bring to a boil. Reduce heat and simmer for 20 minutes, allowing flavors to meld. Add broken lasagna noodles and cook until noodles are al dente. In a small bowl, mix ricotta, mozzarella, and Parmesan cheeses. Ladle soup into bowls, top with a spoonful of the cheese mixture. Garnish with fresh basil leaves before serving.

Ingredients: 1 lb chicken, cooked and shredded. 8 cups chicken broth. 2 cups carrots, sliced. 2 cups celery, chopped. 1 onion, diced. 3 cloves garlic, minced. 2 cups egg noodles. 1 cup frozen peas. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste.
Instructions: Put onions and garlic in a large pot and cook them until they become clear. Spices like thyme, rosemary, salt, and pepper should be added along with the chicken broth. Bring up the temperature. Turn down the heat and let the vegetables simmer for 15 minutes, or until they are soft. Put in egg noodles, frozen peas, and chicken that has been shred. Salt and pepper to taste. 8 cups water.
Instructions: Warm up the oil in the pressure cooker. Add the minced garlic and chopped onions and saut until the garlic smells good. Cover the whole thing in brown cow foot. Add pepper and salt. A comforting and aromatic vegan soup originating from Kashmir, made with split yellow peas, yellow lentils, ginger, and spices.
Ingredients: 1 cup split yellow peas. 1/2 cup yellow lentils. 4 cups water. 1 tablespoon olive oil. 1 onion, finely chopped. 2 cloves garlic, minced. 1-inch piece ginger, grated. 1 teaspoon ground turmeric. 1 teaspoon ground cumin. 1/2 teaspoon ground coriander. 1/4 teaspoon cayenne pepper. 1 teaspoon salt, or to taste. 1 tablespoon lemon juice. Fresh cilantro, for garnish.
Instructions: Run cold water over the split yellow peas and yellow lentils several times. Bring 4 cups of water to a boil in a big pot. Put in the split yellow peas and yellow lentils that have been washed. Lower the heat to medium-low, and let the lentils cook for about 30 minutes with the lid partially on top. Put olive oil in a different pan and heat it over medium-low heat. Add the chopped onions and cook for about 5 minutes, until the onions are clear. To the pan, add grated ginger and minced garlic. Saut for two more minutes. Cumin, coriander, cayenne pepper, and salt should all be mixed in. Add one to two more minutes of cooking until the food smells good. Put the spice mix on top of the lentils and peas that have been cooked. Mix things together well. Allow the flavors to blend for an extra 10 to 15 minutes by simmering the dal. Add the lemon juice and taste to see if the seasoning needs to be changed. Add fresh cilantro leaves on top and serve hot. Have fun with your tasty Kashmiri Dal!
