Toss pitted sour cherries with a couple of dollops of honey, a squeeze of lemon or orange juice, and a shower of 🍋 or 🍊 zest. . 2. Roast in a parchment-lined pan at 400°F / 200°C for 15 minutes. . 3. Drain the cherries & reserve the liquid. Set cherries aside. Transfer the liquid to a saucepan and sweeten it to taste with a couple of spoonfuls of sugar. Heat on medium-low to dissolve the sugar; raise the heat to medium-high and simmer until reduced to a syrup consistency. Remove from the heat. . 4. Tip the roasted cherries into a jar or container. Pour the syrup over them. Let cool to room temperature; cover and refrigerate. . 5. Spoon (warm, room temp, or chilled) over your favorite ice cream.
