Check out the review of @wanderingchocoholic of our 70% Kablon, Philippines Dark Chocolate with Ontbijtkoek (Dutch Breakfast Cake) below! Repost @wanderingchocoholic with @get_repost ・・・ April is 'Celebrate Diversity' Month. It was established in 2004 to recognize and honor the diversity surrounding us. By celebrating differences and similarities during this month, organizers hope people will achieve a deeper understanding and appreciation of each other. ------------- Throughout the month of April, I'll highlight the diversity in cacao origins of craft chocolate. ------------- On the map: Philippines (Davao, Mindanao Kablon, South Cotabato) @aurochocolate: Dark Chocolate (Davao, 64%) and Milk Chocolate (Davao, 42%) On-line profile: AU, the chemical symbol for gold in the periodic table combined with ORO, meaning “gold” in Filipino and Spanish, represents a new way of looking at an old tradition. Cacao has been in the Philippines for over 300 years, and our role is to uncover this treasure and transform them into products that highlight its actual value. (available at @barandcocoa) @firetreechocolate: Mindanao Island (73%) On-line profile: Situated on the most southerly of the larger islands of the Philippines – and in the “Goldilocks zone” 10 degrees either side of the equator – the cocoa farmers of Mindanao Island have the ideal combination of tropical rainforest and volcanic soil. It is perfect for growing a cocoa bean with a distinctive chocolate flavour complimented by layers of citrus, honey and caramel notes. (also available at @barandcocoa) @solkiki_chocolatemaker: Kablon (70%), featuring @kablonfarms I met UK based chocolate makers, Iris and Bob Solkiki, in my Level 1 Tasting Certification course with IICCT last fall. My favorite Solkiki bar is #sowoke. Their bars do not disappoint. (Tasting notes: blackberry leaf, macadamia nuts, honey, caramel. I ordered directly from Solkiki.) Kablon Farms is paving the way for specialty, high quality cacao from the Philippines. @wanderingchocoholic fun fact: Davao and Kablon are located approximately 1200 miles south of where my parents were born and raised in the Philippines. https://www.instagram.com/p/CNKBMQ9D727/?igshid=yris10ivv50t
