Ingredients: 500g pork loin, cubed. 1 cup plain Greek yogurt. 2 tablespoons lemon juice. 2 tablespoons ginger-garlic paste. 1 tablespoon ground cumin. 1 tablespoon ground coriander. 1 teaspoon paprika. 1 teaspoon turmeric. 1/2 teaspoon cayenne pepper. Salt to taste. 2 tablespoons vegetable oil. 1 large onion, finely chopped. 2 cloves garlic, minced. 1 tablespoon tomato paste. 1 can 400g crushed tomatoes. 1 cup chicken or vegetable broth. 1/2 cup coconut cream. 1 teaspoon garam masala. Fresh cilantro, for garnish.
Instructions: In a bowl, combine yogurt, lemon juice, ginger-garlic paste, ground cumin, ground coriander, paprika, turmeric, cayenne pepper, and salt. Add cubed pork to the marinade, ensuring each piece is coated. Marinate in the refrigerator for at least 1 hour, or preferably overnight. Heat vegetable oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute. Stir in tomato paste and cook for 2 minutes. Add marinated pork discard excess marinade to the skillet and cook until browned on all sides, about 5-7 minutes. Pour in crushed tomatoes and chicken or vegetable broth. Bring to a simmer and let it cook uncovered for 15-20 minutes, or until the pork is cooked through and the sauce has thickened. Stir in coconut cream and garam masala. Simmer for another 5 minutes.
