These Spicy Thai Noodle Bowls taste great and don't contain gluten. They are full of colorful vegetables, rice noodles, and a tasty Thai-style dressing that makes for a filling and spicy meal.
Ingredients: 8 oz gluten-free rice noodles. 1 cup sliced bell peppers. 1 cup sliced carrots. 1 cup sliced cucumber. 1/2 cup sliced green onions. 1/2 cup chopped fresh cilantro. 1/4 cup chopped peanuts. 1/4 cup gluten-free soy sauce. 2 tablespoons rice vinegar. 2 tablespoons olive oil. 2 tablespoons honey. 2 cloves garlic, minced. 1 teaspoon sriracha sauce. 1 lime, juiced.
Instructions: Cook the rice noodles according to the package instructions. Drain and set aside. In a small bowl, whisk together gluten-free soy sauce, rice vinegar, olive oil, honey, minced garlic, sriracha sauce, and lime juice. Set aside. In a large bowl, combine the cooked rice noodles, sliced bell peppers, sliced carrots, sliced cucumber, and chopped green onions. Pour the prepared dressing over the noodle and vegetable mixture. Toss to coat everything evenly. Divide the noodle mixture into serving bowls. Top each bowl with fresh cilantro and chopped peanuts.
