This pressure cooker mashed sweet potato recipe is quick, easy, and yields creamy mashed sweet potatoes that are perfect as a side dish for any meal.
Ingredients: 3 large sweet potatoes, peeled and diced. 1 cup water. 2 tablespoons butter. 1/4 cup milk or cream. Salt and pepper to taste.
Instructions: Put sweet potatoes that have been cut up and water in the pressure cooker. Put the lid back on the pressure cooker and turn it on to high pressure. Bring it to a boil. When the food is done, carefully open the lid and let the pressure out of the pot by hand. Take out any extra water from the sweet potatoes. To the sweet potatoes, add butter and milk or cream. With a potato masher, mash the sweet potatoes until they are smooth and creamy. Add pepper and salt to taste. Enjoy while hot!

A hearty and comforting vegan twist on classic shepherd's pie, featuring protein-rich lentils, flavorful vegetables, and creamy mashed sweet potatoes.
Ingredients: 1 cup green lentils, rinsed. 2 large sweet potatoes, peeled and cubed. 1 onion, diced. 2 carrots, diced. 2 celery stalks, diced. 3 cloves garlic, minced. 1 tablespoon olive oil. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. 1 cup vegetable broth. Salt and pepper to taste.
Instructions: Get the oven ready by heating it up to 400F 200C. Follow the directions on the package to cook the lentils until they are soft. Then, drain them and set them aside. Warm up the olive oil in a big pan over medium-low heat. Put in garlic, onions, carrots, and celery. Saut until the meat is soft. To the pan, add the cooked lentils, thyme, rosemary, and vegetable broth. Stir and cook until everything is hot and the broth has almost disappeared. Add pepper and salt. Boil the sweet potatoes until they are soft. Take it out of the water and mash it until it's smooth. Put the lentil mix in a baking dish. On top, put mashed sweet potatoes. Put it in an oven that is already hot and bake it for 20 to 25 minutes, or until the top is golden brown. Enjoy while hot!
