Ingredients: 2 cups all-purpose flour. 1/4 cup granulated sugar. 1 packet 2 1/4 tsp active dry yeast. 1/2 tsp salt. 1/2 cup unsweetened almond milk. 1/4 cup vegan butter, melted. 1 tsp vanilla extract. 1/4 cup unsweetened applesauce. For the Cinnamon Filling:. 1/4 cup brown sugar. 1 1/2 tsp ground cinnamon. 1/4 cup vegan butter, softened. For the Glaze:. 1/2 cup powdered sugar. 1-2 tbsp unsweetened almond milk. 1/2 tsp vanilla extract.
Instructions: In a mixing bowl, combine the all-purpose flour, granulated sugar, active dry yeast, and salt. In a separate microwave-safe bowl, warm the almond milk for about 30 seconds until it's just slightly warm, not hot. Add the melted vegan butter and vanilla extract to the warmed almond milk. Pour the almond milk mixture and unsweetened applesauce into the dry ingredients. Mix to form a dough. Knead the dough on a floured surface for about 5 minutes until it's smooth and elastic. Place it in a greased bowl, cover with a clean towel, and let it rise for 1 hour or until it doubles in size. While the dough is rising, prepare the cinnamon filling by mixing the brown sugar and ground cinnamon in a small bowl. Once the dough has risen, punch it down and divide it into 2 equal portions. Roll out each portion into a rectangle. Spread softened vegan butter on top, and sprinkle the cinnamon-sugar mixture evenly over the buttered dough. Fold each rectangle in half lengthwise, creating two long strips. Carefully braid the two strips together. Preheat your oven to 350F 175C. Place the braided buns on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until they turn golden brown.
