I absolutely love how Eugene, the widely known professional thief in the kingdom, didn't attempt to steal anything the whole time they were in Corona.
He really valued that she gets to have a good time and was willing to spend his money for her if that meant she gets to live her life to the fullest (as it can be) for even just one day, on her birthday no less. And that's such a big deal for someone who "grew up with nothing"
Like he wanted to do right by Rapunzel knowing this is her first time experiencing all sorts of new things outside her tower. He treated the day with importance because he knew it's important to her. Rapunzel's good-hearted nature allowed him to let his own shine through in these moments and she is appreciative of that.
And when they were rowing the boat to get the best view of the lanterns, he described this day as "the best day of her life" as she put it earlier, and he truly made sure it was. It's so so sweet of him.
