The Khojas and Boris Communities in erstwhile Bombay gave the traditional biryani recipe a distinct color and flavour depicting the city's vibrant mood and street food culture. The ingredients like coriander, chilli, caraway, turmeric, green cardamom, cinnamon, yeast extract, bay leaf black cardamom, cumin, clove, black pepper, mint leaf, fennel and nutmeg in the biryani mix of @eastern_in Bombay Biryani masala give you a taste of the local flavours in Amchi Mumbai. . RECIPE🗒 _____________ Ingredients _____________ Basmati rice Chicken Onion Tomato Cinnamon Ginger garlic paste Whipped curd Biryani masala Salt Oil Green cardamom Fresh mint leaves Clove Potatoes Bay leaf kewra essence Moghlai ittar . ______________ PREPARATION ______________ Saute onion in hot oil till light brown and form barista by Frying it for 10mins in simmer. Fry chicken ( previously marinated with salt and haldi powder for about 10mins) Then add tomatoes, curd, ginger garlic paste, mint leaves and saute well till done. Add biryani masala & cook covered till meat tenderise, and add salt to taste. Boil 3-4 cups of water in a separate pan and cook the rice by adding some green cardamom, cinnamon, mint leaves, bay leaf, clove, salt and oil. Drain the extra water and set aside. Then take one large pan, spread the rice, add kewra water and moghlai ittar and then layer the cooked chicken, cover with the left over rice and add kewra and ittar again and cover it barista. seal the pan with aluminum foil with lid on and cook for another 30mins in simmer.
