Earlier this week, I enjoyed this salad. I popped in to Mom’s house after work (she wasn’t expecting me) and, lo and behold, she offered me some plantain that she had just cooked. Not in tostones form (my favorite) mind you, but it was plantain nonetheless. I am completely enamored with this food item! I must have been a very young child when my parents first placed it my mouth. You know, the way parents put food into their childrens’ mouths, with no utensils, they just use their fingers. Well, I tell you, it was love at first bite! In any event, I told my Mom that yes, yes I would have the plantain as mismatched as it seemed to go alongside a salad. I simply placed it on top of my salad and chomped away at it wholeheartedly. Fun food fact: When you work with plantains, they leave a black stain on your fingers and nails. Well, it’s not exactly fun as it is not so easy to get off. It’s known as “la mancha del platano.” Plantains have left a similar stain on my heart. Twice fried, boiled or mashed, they are simply delicioso! Quite versatile.
