Make your favorite campfire treat even better by making these perfect s'mores in an air fryer. No need for a campfire to get them just right toasted with chocolate that melts and marshmallows that gooey.
Ingredients: 2 graham crackers. 2 marshmallows. 2 squares of chocolate milk or dark. Cooking spray or oil for greasing.
Instructions: Get your air fryer ready by heating it up to 180F 350C. Make four squares out of each graham cracker by cutting it in half. On two of the graham cracker squares, put a square of chocolate. Long metal or wooden skewers can be used to stick a marshmallow on. Then, roast it over an open flame or heat it in the microwave for a few seconds until it's soft and slightly puffed. Put the graham cracker square covered in chocolate on top of the marshmallow that has been roasted. To make a sandwich, put one of the remaining graham cracker squares on top of each marshmallow. Use cooking spray or oil to lightly grease the air fryer basket so that food doesn't stick. Make sure there is some space between the s'mores sandwiches when you put them in the air fryer basket. For two to three minutes, or until the s'mores are golden brown and the chocolate melts, air fry them at 350F 180C. Let the s'mores cool for a minute after taking them out of the air fryer. Watch out, they'll be hot! Enjoy the gooey, chocolatey goodness of your perfect air fryer s'mores right away!

This sweet potato casserole recipe is inspired by the famous dish served at Ruth's Chris Steak House. It features a creamy sweet potato base topped with a crunchy pecan streusel and toasted marshmallows, making it a delightful side dish for any occasion.
Ingredients: 4 large sweet potatoes, cooked and mashed. 1 cup packed brown sugar. 2 eggs, beaten. 1/2 cup milk. 1/2 cup unsalted butter, melted. 1 teaspoon vanilla extract. 1/2 teaspoon salt. 1/2 cup all-purpose flour. 1 cup chopped pecans. 1 cup mini marshmallows.
Instructions: Warm the oven up to 175F 350C. Put mashed sweet potatoes, brown sugar, beaten eggs, milk, melted butter, vanilla extract, and salt in a large bowl. Mix everything together well. Spread the sweet potato mix out evenly in a baking dish that has been greased. Set the streusel topping aside. In a different bowl, mix the brown sugar, chopped pecans, flour, and melted butter. Cover the sweet potato mixture in the baking dish with the streusel topping. Put it in an oven that is already hot for 30 minutes. When it's done, take the casserole out of the oven and evenly sprinkle the mini marshmallows on top. Put the dish back in the oven and bake for another 10 minutes, or until the marshmallows are bubbly and golden brown. Let it cool down a bit before you serve it.

This is a delicious and filling sweet potato casserole that's ideal for holidays or any time you're in the mood for something warm and Paleo and approved by the AIP. Toasted marshmallows and a layer of fluffy coconut cream adorn creamy sweet potatoes.
Ingredients: 4 medium sweet potatoes, peeled and cubed. 1/4 cup coconut milk. 2 tbsp coconut oil. 1/4 cup maple syrup omit for AIP. 1 tsp cinnamon. 1/2 tsp ground ginger. 1/4 tsp sea salt. 1 cup coconut cream. 1 tbsp gelatin powder omit for vegan, or use agar agar. 1 tsp vanilla extract omit for AIP. 1/2 cup unsweetened shredded coconut. 1/2 cup chopped pecans or walnuts omit for AIP. 1 cup marshmallows Paleo & AIP-friendly, check labels.
Instructions: Preheat oven to 375F 190C. Boil sweet potatoes until fork-tender, about 15-20 minutes. Drain. In a large bowl, mash the sweet potatoes with coconut milk, coconut oil, maple syrup if using, cinnamon, ginger, and sea salt until smooth. Transfer the mashed sweet potatoes to a greased casserole dish. In a separate bowl, whip coconut cream until fluffy. Sprinkle gelatin powder over whipped coconut cream and whip again until fully incorporated. Add vanilla extract if using. Spread the whipped coconut cream over the mashed sweet potatoes in the casserole dish. Top with shredded coconut, nuts if using, and marshmallows. Bake for 20-25 minutes or until marshmallows are golden brown and casserole is heated through. Serve warm and enjoy!

National Toasted Marshmallow Day...
With fall weather (hopefully) soon upon us making smore's and enjoying a nice toasted marshmallows over an open fire with family and friends is a tradition. Even though marshmallows, have been around for a while, since ancient Egypt, it wasn't until recently that we have started to really notice this sugary treat. In fact, it was recorded that marshmallows were used to treat angina?! Today, we just enjoy it with a bar of chocolate and graham crackers or just by itself over an open fire.
No matter how you enjoy it, today is a day to take the time to really take notice of its enjoyment.
