It was so cold this morning, I only got a slow and miserable 5K in. Lunch needed to be a light soup. Instant Pot to the rescue (as usual!). Tossed in red lentils, barley, onions, garlic, carrot, celery, greens, fire roasted diced tomatoes, vegetable broth, balsamic vinegar, and curry powder. 20 minutes high pressure, 10 minutes natural release, then QR. Topped it off with some leftover spicy peri-peri sauce from last night’s dinner.
