Ingredients: 1 lb ground turkey. 1 onion, finely chopped. 2 cloves garlic, minced. 1 can 14 oz fire-roasted diced tomatoes. 1 can 15 oz corn kernels, drained. 1 can 15 oz black beans, drained and rinsed. 1 jalapeo, seeded and diced. 1 teaspoon ground cumin. 1 teaspoon chili powder. 1/2 teaspoon smoked paprika. 6 cups chicken broth. Salt and pepper to taste. 1 cup tortilla strips. 1/2 cup fresh cilantro, chopped. 1 lime, cut into wedges. 1 avocado, sliced. Shredded cheese for garnish.
Instructions: In a large pot, cook ground turkey over medium heat until browned. Drain excess fat. Add chopped onions and garlic to the pot. Saut until onions are translucent. Stir in fire-roasted diced tomatoes, corn, black beans, jalapeo, cumin, chili powder, and smoked paprika. Pour in chicken broth and bring the soup to a simmer. Season with salt and pepper to taste. Simmer for 20-25 minutes, allowing flavors to meld. While the soup is simmering, prepare tortilla strips by baking them in the oven until crisp.
