RAW VEGAN TACO SALAD with CARROT WALNUT MEAT...organic, gluten free ... This taco “meat” is a mix of carrots, walnuts, spices, herbs, and sauces/dressings to flavor- raw meaning nothing has been cooked but it taste as if it has. It is a light and a very flavorful mix to add to a meal or snack. Can be Paired with roasted peppers or raw to keep up with the raw theme. Also you can eat with veggies, greens, salsa, guacamole, jalapeno and other toppings of choice make this a very filling and satiating . You can add many healthy choices to make this a full course. Make the hand held TACO with the lettuce or "Raw Carrot Lettuce boats," as my students called them. Variations of tacos, taquitos, nachos, lime cilantro quinoa or nice Latino Rice. I love making my cuarto mest for myself to pull out and eat when I want guilt free and had an amazing time creating it with my students! Eggfruit or Canistel Pouteria campechiana is an evergreen tree native to, and cultivated in, southern Mexico, Belize, Guatemala, and El Salvador. This is absolutely and unequivocally delicious!!! I can have this everyday. This was part of a meal planning for one of my clients. When we picked up the fruit and I explained to her the myriads of ways to deliciously and healthily preparing this fruit...the sky is the limit...yummilocious!!🥰🌱 So, The Fruit The flesh is somewhat pasty and has a creamy mousse-like texture. The flavor is rich and is reminiscent of an egg-custard. The fruit may contain between one and six large brown seeds. Low is water content and high in calories. When is ripe o actually has a texture of hard boiled eggs. Why is it good? Like other orange-colored fruits, eggfruit is high in BETA-CAROTENE and NIACIN. Which protects eyes, gives hair sheen, and maintains healthy skin. It helps with preventing and eliminating various inflammations in the body. Due to the high levels of minerals present in the fruit, it may help lower blood pressure. Lastly, the CAROTENOIDS help fight cancers, age related degeneration, depression, headaches, heartburn, and high blood pressure. 🔪HOW TO EAT?? It can be eaten fresh. Cut fruit in half, remove the few shiny black seeds from the center, and scoop out the flesh, however the thin rubbery skin is non-edible. When this fruit has ripened one can make a jam, marmalade, pancakes, and flour. You can take the ripe flesh blend it with milk and other "healthy" ingredients and make a smoothie. If you use it as a puree it is sometimes added to custards or used in making ice cream. It is also used in a milkshake known as "eggfruit nog" or a Canistel Avocado Cream Pie... which is one I wish to make soon.
