This vegan grilled veggie panini is a quick and delicious way to enjoy a healthy meal. Packed with colorful vegetables and optional vegan cheese, it's perfect for a satisfying lunch or dinner.
Ingredients: 1 zucchini, thinly sliced. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 red onion, thinly sliced. 2 tablespoons olive oil. Salt and pepper to taste. 4 slices of your favorite vegan bread. Vegan cheese slices optional. Fresh basil leaves optional.
Instructions: Warm up your panini press. Red onion, zucchini, yellow bell pepper, and red bell pepper should all be mixed together in a bowl with olive oil, salt, and pepper. Lay the vegetable slices on the hot panini press and cover it. Grill for four to five minutes, or until the meat is soft and grill marks show up. Toast the bread slices briefly in a toaster or on a panini press while the vegetables are cooking on the grill. After the vegetables are grilled, put them on one slice of bread and then put the other slices on top. If you want, you can add vegan cheese slices and fresh basil leaves. Add another slice of bread on top. Close the lid on the panini press and put the sandwiches back on it. The bread should be grilled for another two to three minutes, or until it is golden brown and crispy. Take the sandwiches out of the press, cut them in half diagonally, and serve them hot.
