Ingredients: 2 cups shredded zucchini. 1 cup shredded carrots. 1/2 cup almond flour. 2 eggs. 2 tablespoons grated Parmesan cheese. 1 tablespoon chopped fresh parsley. 1/2 teaspoon garlic powder. Salt and pepper, to taste. 2 tablespoons olive oil, for frying. 1 ripe avocado. 1/2 cup Greek yogurt. 1 tablespoon lemon juice. 1 tablespoon chopped fresh cilantro. Salt and pepper, to taste.
Instructions: Shred the zucchini and carrots and mix them with the almond flour, eggs, Parmesan cheese, chopped parsley, garlic powder, salt, and pepper in a large bowl. Combine well by mixing. Over medium-low heat, warm the olive oil in a big pan. Take about 1/4 cup of the vegetable mix and put it in the pan. Use a spatula to make a fritter by flattening it a little. Make more fritters with the rest of the mixture, leaving some space between them. For three to four minutes on each side, or until golden brown and crispy, remove from the heat. Take them out of the pan and let them drain on a plate lined with paper towels. In the meantime, mash the ripe avocado in a bowl to make the avocado yogurt sauce. Lemon juice, chopped cilantro, salt, and pepper should be added. Mix until it's nice and smooth. Put the avocado yogurt sauce on the side so that you can dip the hot vegetable fritters in it.
