I have random facts that bring light to why Remmick aggressively drools, outside of it being a sign of a hungry predator.
Human body when the tongue presses up on the roof of the mouth or back like when you swallow, produces more saliva (which is just blood minus red hemoglobin but that's another thought).
Remmick is OLD. And old Irish languages had far more back of the throat vocal movements. Like Old school Hebrew, sounds come from the back of the throat. So tongue posture would have his tongue further back to talk faster for Irish speakers. Plus, it'd be a counter measure to not cut his tongue on his vampire fangs. So he'd instinctually over correct when hunting with full fangs out this, resulting in way more saliva/drooling then the newer vampires.
