Here's my attempt to recreate that Rumbi dish. I chopped multi-colored carrots, 1/2 an onion and sauteed them with garlic and olive oil. Then I added the yellow squash. I cut up the tofu, put it in the pan and added a little gluten free tamari and teriyaki sauce. I cooked rice last night so it was ready to go. A bit more teriyaki sauce, some red pepper flakes, heat it all through and we have a BINGO. Serve it in a bowl my Brudda brought from Korea. Also, leftovers in my "Freezes Beautifully Section."
