so far i have posted about desserts, coffee, and a quick breakfast. lame. let's get some hearty meals around here. oh, and i also have another dessert...
anyway. meal numbero uno.
chicken tortilla soup! this one actual came from one of my best girlfriends. and obviously i had to take a few things out (tortillas for starters) since i am still on whole30.
it is a crockpot recipe which was nice because it was made overnight, and now i have it to bring for lunch everyday.
two 14.5 oz cans of fire roasted diced tomatoes
two 5 oz can of green chiles
three cups of chicken broth
three tablespoons of cumin
two tablespoons of paprika
a couple sprinkles of cayenne pepper
put that shit on low for 7.5 hours and booyah --> chicken soup.
shrimp and jalapeno sweet potato biscuits - i got this one from www.paleomg.com which is a great source for paleo and whole30 recipes. check out the recipe here.
i felt i needed a sweet potato recipe because they are high in carbs, and that is definitely missing from my diet.
3 tablespoons almond meal
4-5 shrimp, cooked, diced small (food processor)
3 tablespoons ghee or unclarified butter
1 jalapeño, thinly diced (food processor with shrimp)
preheat oven to 415 degrees. wash the sweet potato. stab the sweet potato (you know, make holes so it can breathe). microwave the sweet potato with a damp paper towel over it for 5 minutes on each side. peel the sweet potato. mash the potato in a bowl and then add eggs and ghee and mix well. mix together the almond meal, baking powder, garlic powder, salt, and pepper and add to the potatoes and eggs. next we food processed the shrimp and jalapeño and added that to the total mixture. then we used a measuring cup to scoop up mixture and plopped it on aluminum foil. turn the oven down to 375 degrees and put the biscuits in. they should be done in 22 minutes but watch them!
recommended side is sauteed mushrooms with steamed lemon pepper broccoli.
last recipe. drumroll please. chicken-chorizo burgers. this recipe came from a website called emeals. emeals really helped me kick start my healthy, and much cheaper, eating lifestyle. they give you seven meals for the week (you can choose paleo specific diet) and a shopping list at the end which will incorporate one ingredient in multiple meals. you can read about emeals here (also, it is not a free service - but definitely worth it). while i still use it, i pick the recipes that excite me the most. doesn't chicken-chorizo burgers just make your heart sing?
1/2 lb raw ground chorizo
two cloves garlic, minced
one teaspoon chopped thyme
one tablespoon light olive oil (or coconut oil)
preheat grill. compile all ingredients in a bowl and mix together. with your hands. and create eight patties. stay safe and wash your hands after! and don't touch anything until then! put some oil on the grill and place the patties on the grill for 6 minutes each side (check the middle to be sure it is cooked through).
recommended side is well of course anytime you can put avocado on your meal, you should. this would be one of those times. i smothered it in avocado. steamed brussel sprouts were a great side as well.
finally dessert. these are called ... i am actually not sure but we'll just call them yummy balls. err i mean... delicious nut balls! hmm that doesn't work either. anyway you get the point. i found the original recipe on pintrest and can also be found on this website.
one cup unsweetened coconut flakes
one cup pitted medjool dates (these continue to impress me)
one cup assorted nuts (i used walnuts, almonds and pecans)
1/2 teaspoon of vanilla extract
put all those guys in a food processor until mixed well. take them and squish them into balls. use pressure. and you're done! these are actually a thousand times better than my pretend irish potatoes...
