Vegetable Stir Fry with Ginger Teriyaki Sauce
Fresh and simple Ingredients:
* 1 tablespoon cold pressed avocado oil * 1 organic red bell pepper thinly sliced * 1-2 cups organic snap peas * 1/2 yellow onion thinly sliced * 1 cup organic sliced mushrooms * 2 cups broccoli florets * 2 cups cauliflower * 1 cup baby corn * 1/2 cup water chestnuts * 1 cup organic edamame * 1 bunch of scallions thinly sliced (slice white and green part of onion) * 1 cup raw cashews
Ginger Teriyaki Sauce: * 1/2 cup liquid aminos (tamari, coconut aminos, or gluten free soy sauce can be used as well) * 1/2 cup organic coconut sugar * 2 garlic cloves minced * 1 tablespoon organic ginger minced * 2 tablespoons organic rice vinegar * 1 tablespoon guar gum (or substitute arrowroot powder) * 1/4-1/2 cup of water depending on how thick you want your sauce. Adjust accordingly
Organic short grain brown Rice: Cook according to package.
INSTRUCTIONS:
In a wok or large skillet add 1 Tablespoon avocado oil over medium high heat. Add sliced onion, white part of scallions, bell pepper, peas, carrots, mushrooms, broccoli, cauliflower, edamame, baby corn, and water chestnuts. Cover for 1-2 mins. Stir and cover again. Sauté until veggies are almost tender. While stir fry is cooking, stir liquid aminos, ginger, garlic, coconut sugar, guar gum, and water in a small bowl. Keep in mind that Guar gum thickens faster than corn starch. You can add water according to how thick or thin you want you sauce to be. Pour over veggies and stir until veggies are covered in sauce. Add a little bit of water if the sauce is too thick. Garnish with chopped green onions and sesame seeds if desired. Serve over brown/white rice or quinoa. Enjoy!

FOOD IS POLITICAL
A healthy reminder that what you eat, where you get it from, who gets to eat it–food is very much a political issue. More than just beautifully styled photos and awesome recipes, I want us to all consider how we can further food justice and equity efforts with our purchasing power and commitment to sustainability. I’m floored by the work orgs like @riotribs is doing. Feeding the masses during Portland’s protests, making sure folx are fueled to keep fighting.
While I may not have been at the forefront of the action last night, I marched with one of the largest protest gatherings in PDX last night. Through the streets of NE Portland into downtown, witnessing the vital importance of community taking a stand. This work is necessary. Creating space and opportunity for BIPOC to thrive is necessary. Food for the fire is necessary.
I want to further what it means to eat sustainably and create access for all walks of life. How we can connect marginalized folx to healthy food is an environmental issue AND a political issue. The things we eat everyday is a statement. Where it’s sourced, how it’s produced, packaged, where it’s sold. We make a choice everyday to unconsciously support institutions. How much further does your dollar go when you fund Black owned CSA’s that subsidize food for Black families rather than a chain grocery store?

Here's a great breakfast for easy Sunday mornings! Try it next weekend and let me know what you think! Buckwheat, almond & cacao pancakes! 🥞 Mix 1 cup buckwheat flour and 2 tpsp ground almonds with a pinch of baking powder, 1tsp cacao, 1/2 tsp maca and a dash of cinnamon ✨💜 mix in any plant milk (today I used rice milk but Almond would be delicious!) mix until the mixture is thick but will run off a spoon (approx 2 3rds of a cup) Heat a large non-sick pan and heat pancakes until bubbles have formed on the top sides! Flip and cook on the second side! For toppings I used a chia and Berry mix that I previously made.
