A bit like ardbeg corrywreckan in Coke without carbonation. First sip repulsive. Then more and more interesting and intriguing. Finished it with pleasure. First try of my wild yeast try, where I diluted 5l of the original sour elderberry wild yeast ale with 20l of fresh Wort just how #themadfermentationist told me to do. I was scared but it turns out this is amazingly smooth, sweet creamy wild yeast taste. Not sour anymore at all. Omg what a beer I could not resist and opened a bottle of this wild yeast barrel aged ale. This is probably the best I ever had. Tastes like the best cider you can imagine (but there is no apple juice in it) with some excellent Chardonnay or Chablis with very round cask aromas and 30% abbey ale mixed in. Enormously complex and yet soooo easy to drink. Just wow. Wild yeast elderflower pale ale experimenting... no yeast added, just 1kg of fresh elderflowers, bugs included.
