A delicious and hearty frittata that combines the flavors of winter squash, apple, and bacon. Perfect for a cozy winter brunch or dinner.
Ingredients: 1 cup winter squash, diced. 1/2 cup apple, thinly sliced. 4 strips of bacon, chopped. 6 eggs. 1/4 cup milk. 1/2 cup shredded cheese your choice. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Preheat your oven to 375F 190C. In an ovenproof skillet, heat the olive oil over medium heat. Add the diced winter squash and cook until it starts to soften, about 5 minutes. Add the chopped bacon and continue cooking until it becomes crispy, about 5 more minutes. Stir in the thinly sliced apple and cook for an additional 2 minutes until it starts to soften. In a bowl, whisk together the eggs, milk, shredded cheese, salt, and pepper. Pour the egg mixture over the squash, bacon, and apple in the skillet. Cook on the stovetop for 2-3 minutes, or until the edges start to set. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden on top.
