Finally finished my dry aging project. This @certifiedangusbeef 19.5lb 8 bone ribeye primal from @pattonsmeatmarket sat in an @umaidry bag for 49 days. I removed it from the bag, trimmed at the waxy exterior and sliced it into 2" thick steaks. The beefy smell is tremendous and I can tell that the flesh is extremely tender. These signs tell me that the dry aging was a success!
