Yogi Breakfast Bowls. The leftover meal planning continues. Two days we had Shrimp Grits for breakfast with leftover pesto shrimp from our pasta dinner the night before. Scroll back to read all the details. This morning I took the leftover grits and made a Yogi Bowl. First, I crisped plant-based bacon in the air fryer and heated the grits with a bit of butter and oat milk in the microwave. While all that was happening I sautéed onion, zucchini and kale. While I fried eggs over-easy I popped leftover biscuits in the still warm air fryer without turning it on. I chopped a clove of raw garlic and mixed it into the grits with turmeric, both for their anti-inflammatory properties. So important for my arthritis. Such yumminess! I start every morning with protein and veggies. Once in a while I’ll have something like pancakes, and franklyI feel like crap after. I get tired and my brain gets fuzzy. Veggies and protein with a small amount of carbs ignites my brain, gives me energy and keeps me full through the morning. It’s a feeling that I’m committed to, so I’m intentional about my first meal of the day. What do you eat to get going in the morning? Breakfast is so vital to jump start you mind/body/spirit. Breakfast Yogi bowl. Love yourself! Do the things that you know are good for you. I know we all think we’re loving ourselves when we reward ourselves with sugary sweets and other junk food. Actually, you’re doing the exact opposite. Sabotaging your health is not self-love. What if the next time you want to treat yourself you splurge on a cut of expensive fish you wouldn’t normally buy? Or that fancy bottle of olive oil? This yogi bowl was the perfect energy boost after Vinyasa this morning. A few days ago I made a big batch of oatmeal and we had it with nuts and dried fruit. Today, we reheated the oatmeal and added coconut oil and milk, crumbled up a leftover piece of bacon and added an over-easy egg, raw broccoli and Everything But The Bagel. Not pictured, Louisiana hot sauce! So yummy because a morning with bacon, eggs and @traderjoes Everything But The Bagel is a good morning! I love that we indulged in the yumminess of bacon, but only had one piece and that was the perfect flavor. I also am a big fan of multiple textures.
