BUTTERCAKE BAKERY LEMON BARS DECODED
Citrus maniacs will flip for these delicious lemon bars! Use the helpful tools listed below to streamline the prep work.
prep time: 15 Minutes serves: 12 (Makes one dozen 2x2-inch bars)
helpful tools: Microplane, Food processor, Citrus Juicer
For the crust:
1 1⁄2 cups flour
1⁄2 cup powdered sugar
6 oz (11⁄2 sticks) butter
For the filling
6 eggs 3 cups sugar
1/2 cup of flour
1 cup lemon juice*
Zest of 1 lemon**
Powdered sugar for dusting
* Use citrus juicer ** Use small Microplane for zest
Make the crust:
1. Pre-heat oven to 350 degrees
2. In a food processor, pulse flour, powdered sugar, and butter until
mixture is the size of small peas
3. Press dough into buttered 9x13 pan. Bake for 20–25 minutes until golden brown
Make the filling:
1. Whisk together eggs and sugar; stir in lemon juice and zest, then add flour
2. Pour lemon filling onto crust
3. Bake for 40 minutes until the filling is set
4. Allow to cool on a cooling rack, slice into 2-inch squares, and dust with powdered sugar
