This Potluck Pasta Salad with Dijon Vinaigrette is a delightful and colorful dish that's perfect for picnics, potlucks, or as a side dish for any meal. The tangy Dijon vinaigrette adds a zesty kick to the fresh vegetables and pasta, making it a crowd-pleaser.
Ingredients: 8 oz rotini pasta. 1 cup cherry tomatoes, halved. 1 cup cucumber, diced. 1/2 cup red bell pepper, diced. 1/2 cup red onion, finely chopped. 1/2 cup black olives, sliced. 1/4 cup fresh parsley, chopped. 1/4 cup feta cheese, crumbled.
Instructions: Follow the directions on the package to cook the rotini pasta until it is al dente. Run cold water over the drain and rinse. Boil the pasta and put it in a large salad bowl. Add the cucumber, cherry tomatoes, red bell pepper, red onion, black olives, and fresh parsley. Put the Dijon vinaigrette ingredients see below in a small bowl and mix them together with a whisk. Pour the Dijon vinaigrette over the salad and toss it around so that everything is covered. On top of the salad, crumble some feta cheese. Put the salad in the fridge for at least 30 minutes so that the flavors can mix. Give the salad one last toss before serving, and if you want, top it with more fresh parsley.
