Simple + quick + balanced vegan lunch Baked sweet potato with mixed beans in tomato sauce, roasted tomatoes and garlic, on shredded Romano lettuce. Yummm
Stressful days call for comfort eating, and there's no better place for that (bearing in mind, I'm student wracked by poverty) than Indian Veg in Angel, here in London! Indian veg is an all-you-can-eat Indian vegetarian buffet, however, the huge majority of dishes there are vegan (just ask which ones aren't). You pay just £6.50, and can fill-up your plate as much as you want. Pretty nice idea, and so unique in London to find places still like this, bearing in mind you can end-up spending about £25 on a tiny plate of easily homemade food at similar places like @ethosfoods (as I once did - paying £2 for a slice of bread made of sunflower seeds hahaha). This was my first plate, and, well, I had two more afterwards... Three kinds of rice, turmeric and garlic potatoes, gorgeous beetroot salad, and one of the many curries available that day. Perfect place to #carbthefuckup
We try to get two handfuls of fresh greens in first thing in the morning. This sometimes takes the form of in a delicious creamy smoothie, or simply as shown here, as a gorgeous little side salad. For breakfast this morning, I had a scrummy bowl of muesli with almond milk, along with a side of millet bread smothered in hummus and topped with spinach! I drizzled a little olive oil on, and topped with black pepper. It was simply delicious. Along with this, I was sure to have two clementines on my way to school. Listen fellow vegans - it's super important to have a source of vitamin C when you are eating spinach, this is because it increases the bioavailability of the iron in the spinach so your body will be better nourished by it! The easiest way to do this is having a glass of orange juice with spinach, or alternatively, you can squeeze some lemon juice on it. If you're having it in a smoothie, go ahead and add a little baobab powder! Your body will love you for it

I was invited to the Penter residence for dinner, and as I was the only vegan there Frank kindly took on the challenge to create three courses that everyone could enjoy. As a starter we enjoyed a clean and fresh tomato soup with a basil garnish. Simple, but yummy!
After a chaotic Friday night, my dear friend, Polly treated my for brunch in North London's popular Jewish community Golders Green knowing we both have an interest in Jewish culture. After receiving brash remarks from a waitress at restaurant for simply asking if they served a diary free milk alternative we left, and we're so glad we did. Fancy Kosher cafe @soyolondon offers exceptional service! The waitress was happy to answer all my complicated questions about my dietary requirements. I was delighted to see the vegan breakfast advertised. You certainly get your money's worth -Everything pictured was part of the breakfast (isn't that great?) You choose a hot drink, a juice and your preferred bread. Here we have carrot juice, black coffee and seasonal bread with Quinoa and herb pancakes, tapenade, pine nut and beetroot, grilled aubergine and a variety of other sides. In Britain vegan meals are often the only alternative for Muslims and Jews who are cannot always eat Halal or Kosher went dining out so it's important to the vegan options are as yummy as possible. Although dairy and meat are readily available as well as Kosher at SOYO, this vegan breakfast is their most popular meal. That's a true sentiment to how delicious this was!
I went round to my friendās this evening for dinner⦠not having cooked vegan before, she was a little apprehensive, but pulled it off spectacularly!
Baked porcini mushrooms stuffed with barley and sundried tomatoes, roasted Jersey new potatoes with olives, lemon and tomatoes, and a super delicious dish of green beans and mange tout in orange with toasted hazelnuts.
This was all so delicious, and Iām definitely stealing these recipes!

This combination is divine. Of course so simple, but God, so good. This is all I can think about at the moment; after chia pudding in the morning, the only thing I want for lunch and supper is avo toast!

Went out for dinner and a much-needed catch-up yesterday with my favourite Guernsey-based artist Antonia Ramsey and we had a gorgeous evening!
Antoniaās taken up (flexible) vegetarianism recently, and I, knowing something of vegan/vegetarian culture in Guernsey, raised Christies Restaurant as an option due to their extensive vegetarian menu (with vegan options!) Over dinner, we talked about how it can be quite difficult to be vegetarian let alone vegan in Guernsey, where we do have a rich culinary culture, but heavily based on red meat, local dairy, and of course, fresh seafood from the sea around. Yet, things are improving in Guernsey, and for a town of 60,000 people, we are pretty good I think!
There are vegetarian options everywhere, and vegetarian menus in some of the restaurants (like La Nautique, and of course, Christies), furthermore, itās easy to find vegan sushi at places like Hojos or the Hook, while the Pelican CafĆ© has its own vegan menu! This is the vegan starter I had at Christies - a lemony spinach salad with toasted pine kernels and braised mushrooms. Like all food at Christies, it was delicious!

Remembering the yummy roast potatoes from yesterday. I love to parboil the potatoes in water with crushed garlic and dried herbs, then, I roast them in the oven with chopped onion and apple! Drizzled with a little apple cider vinegar, this combination is absolutely delicious.
I love Sundays. They are the perfect excuse to roast tons of seasonal vegetables and fruit, stuff mushrooms with fluffy quinoa, and generally gorge as a delicious end to the past week, and welcome preparation for the next. I'm so fortunate to be from Guernsey because there is fresh locally grown vegetables for sale on almost every street corner! Here is a mix of local courgettes, peppers, onions, garlic, some aubergine, and Guernsey cherry tomatoes (possibly the best in the world?) I'm really getting into roasting fruit with my vegetables, and to this, I added some sliced peach - it really works!
