Tofu / Vegetable Stir-fry with a Spicy Honey Glaze
Ingredients:
1 Serving of brown rice
1/3 a block of extra firm tofu
1 cup of broccoli
1/3 a white onion
1/2 a cup of sliced carrots
1/2 a tbsp. of minced garlic
1/2 a cup of sliced bell pepper
Organic honey
Cayenne pepper
Steps:
1.Slice the drained tofu into 1in. strips
2.Brown the tofu in a frying pan with olive oil , ½ a tbsp. of minced garlic, salt and pepper
3.In a separate pan begin cooking the sliced onion and bell pepper in olive oil with salt & pepper
4.While the tofu , peppers, and onion cook, boil the broccoli in a pot . The broccoli is finished when it is no longer crunchy but not very soft
5.When the peppers and onion become light brown, add the sliced carrots, golden brown tofu, and cooked broccoli to the pan with the peppers and onion
6.While these ingredients cook together, cook the brown rice. Make sure to stir the vegetables in the pan every few mins.
7.When the tofu, peppers, broccoli, and onion start to turn brown squeeze about 3tbsp.s of honey into the pan along with about 1 tbsp. of cayenne pepper (more or less depending on how spicy you want it)
8.Let the ingredients sit in the pan for about 3 more minutes., stirring so that the glaze covers everything
9.Plop on a plate and enjoy!
