Today I made Rose–Cranberry Vinegar & Dark Chocolate Extract. These are for Valentine’s Day dinner, started weeks early because the meal they belong to needs time before it ever reaches the table.

The first is a rose–cranberry vinegar ferment. Cranberries split just enough to release color, lemon zest resting at the bottom, rosewater softening the sharp edges. This will age for weeks and become an acid backbone—something to sharpen vegetables, finish sauces, and brighten plates long after the season it started in has passed.

The second is a dark chocolate extract. Chopped bittersweet chocolate, cocoa powder, and nibs steeping in vodka, sealed and left alone. It doesn’t look romantic yet. It looks dense, murky, unfinished—but that’s how extraction begins: quiet, patient, pulling flavor out over time. This is cocoa without sweetness, meant to add depth to dessert and sauces later, not to be tasted on its own.

I made butterscotch white chocolate espresso bars! They are dense, chewy, gently bitter at the back of the bite. Finished with an apple cider vanilla cream fizz. Cold, spiced, calm.

Tonight I made Maple Bourbon Brown Butter Short Ribs, deep and savory with a dark sweetness. Roasted Garlic Chive Mashed Potatoes, smooth and buttery. Roasted Garlic Creamed Corn, rich and comforting. Maple Bacon Kraut with warm apple slaw, fermented back in July, mellowed and gently sour, tossed with fresh apple and heated through. Brown Butter Cornbread with a honey–thyme glaze, crisp at the edges and tender in the center.

Today I made Black Cherry Pistachio Stuffed Spiral Rolls! An enriched dough rolled thick enough to hold its shape, chilled, then inside, a bold black cherry syrup—dark and sticky, layered with finely chopped pistachios and a cheesecake core. The glaze went on while they were still hot and a sprinkle of more pistachios to finish! They were sweet, but grounded and messy in the right places!

Today I made a Honey–Thyme Milk Sandwich Bread. The crumb is soft and mostly even 🤣 , enriched with milk and honey. The thyme sits quietly in the background—herbal, warm, and subtle. It’s a sandwich bread that feels sturdy enough to hold fillings, soft enough to eat warm with butter, and balanced in flavor without leaning sweet or savory.
