Butternut
I do not have a chef's highly attuned taste-buds, so to me a butternut squash is indistinguishable from pumpkin in recipes. Which is why I had a really good mock-pumpkin pancake this morning, and just took a small, great-smelling mock-pumpkin pie out of the oven. I made butternut squash for dinner a few nights ago, and there was quite a bit leftover. Not anymore!
The microwave 'pancake' recipe is one I collected when I was researching gluten-free recipes. Pretty sure you could make it with regular pancake mix just the same.
One egg, 1/3 c pancake mix, enough milk to make a thick batter. Small baking dish or ramekin, sprayed with cooking spray. Microwave two minutes.
To the above, you can add chopped apple, cranberries, a scoop of pumpkin (or squash) puree, even chopped ham and cheese. So quick, so good.
