Been busy preparing for Emerald City Comicon! Haven't cooked anything that visually interesting lately, but everything has been tasty. I made a chicken-kale-quinoa-bean soup today in the slowcooker that came out awesome but I didn't get any pictures of it unfortunately. It'll be my lunch tomorrow though, so there could be a pic then!

Tonight's dinner was a take on this recipe for Greek-marinated chicken, though we improvised a bit. I roasted the chicken on top of some lemon slices turned out awesome. The whole thing went better than expected!

last night we improvised (a fireless, rum-less) bananas foster and it was successful but we didn't take any photos. we reprised it with the remaining banana. 

cut an under-ripe banana lengthwise and then into thirds

melt a few tablespoons of butter in a non-stick pan

stir in 1/4 cup brown sugar and add nutmeg and cinnamon to taste

add a tablespoon (or more) banana liqueur and stir to incorporate (it will bubble a lot) 

add the banana slices, stirring often

cook the slices for a few minutes on each side

serve on vanilla ice cream

Today we made some granola with some dried cranberries, almonds, and shredded coconut. I also mixed half of the granola with some peanut butter and pressed it into a glass tray to be cut into bars when it sets.

Tonight we adapted this recipe for the Aiya Rainy Day Special Mega Beef Bowl from Persona 4. We substituted tofu for the mushrooms, and omitted bean sprouts and the egg.
