I made the #GBBO Christmas special mince pies. Mostly. I gave up on the lattice work because I could :-) but the filling is yum!
Gluten free orange and ricotta sfogliatelle
Gluten free pink Russian cake
So many fruity cakes. Making a Russian apple cake with the last of Dad's red flesh apples. This one is gluten free with three large eggs, one cup of sugar, one cup of gf flour and some vanilla. It will be dusted with cinnamon and icing sugar when it's cold. I'm baking it at 180 for half an hour but it will need covering with foil and baking for another half an hour after that.
There wasn't a specialist diet week this year but these are the coconut flour, gluten and dairy free cupcakes I made for the carers group yesterday because the Artist had intolerances. There is a very nice coconut oil frosting I could have made but I had no icing sugar.
Another fruity cake. Comment yesterday was 'is that actually an upside down cake?' I said 'Yep. Retro 70s except they didn't have nectarines back then.'

Watercress, Gorgonzola and sunflower seed bread for Halloween sandwiches. The second naturally flavoured and coloured bread. This one is filled with Prosciutto and more watercress.
Adaptations
Of course, in a competition, I'd have constructed a pastry wall but it reminded me a bit too much of Trump's foreign policy so I protested against the wall and didn't build one just for home.
And sweet clangers made with plum, pear and stem ginger.
Bedfordshire clangers made with walnut, watercress, onion chutney and hop coated cheese.
Fruity trifle from pudding week. Chambord and raspberry jelly with vanilla rum custard and trifle sponge. I wouldn't have won star baker on this one! Too impatient to get it out. It wasn't nearly neat enough. The flavour was top class, though!
Who could resist the opportunity of making 'Little Nickys'? 😈
