Being unemployed and stuck at home with nothing to do is the absolute worst. The upside though is that I am definitely learning my way around my tiny kitchen...that’s for sure.
I am an avid snacker so to save myself from eating everything that is unholy aka unhealthy, I made these yummy protein bars. I altered the recipe just a tad to fit my Weight Watchers needs (3 points per square if cut into 16 pieces). They don’t require a lot of ingredients and they don’t take that long to bake.

2 cups oats (old fashioned)
1/3 cup protein powder (any type)
1/4 cup Almond meal/flour
1/4 cup whole wheat flour
1/2 cup unsweetened apple sauce
1/4 cup Lily’s Dark Chocolate Chips With Stevia
Preheat oven to 350 degrees and line an 8x8 baking pan with parchment paper for easy protein bar removal.
In a large bowl, mix all dry ingredients (not including chocolate chips) together.
In a small bowl, whisk together apple sauce, honey and vanilla. Pour mixture over the oat mixture and stir well. Add chocolate chips and stir again until everything is evenly blended together.
Spread mixture evenly into prepared baking pan using a spoon or spatula to press the mixture firmly into the pan in an even layer.
Bake for 22-25 minutes or until lightly browned. Let cool completely before slicing into bars.
