So for this recipe I did it with tofu, however some people can’t have tofu or just don’t like it. Actually while I was searing the tofu tonight i was thinking of how great it’ll work with panella. I then served it over brown rice spaghetti.

Panella is polenta made from chickpea flour, it’s gluten free, soy free, dairy free, and super tasty.

Vegan Lentil Bolognese

Serves 4

1 ea Carrot, small diced

1 ea Celery Stalk, small diced

1 ea Onion, small diced

1 cup Lentils

2 cups Crushed Tomatoes

2 cups Vegetable Stock

½ cup Unsweetened Coconut Milk

1 clove garlic, minced

Pinch Red Pepper Flakes

Salt & Pepper To Taste

Sweat out the carrot, celery, and onion.

Then add lentils and stock, cover cook until lentils are tender (be careful not to overcook)

After a brief break The Veggie Chefy is back with more food to share and new recipes. I am open to requests so if you have an idea throw it my way. Tonight's dinner: Roasted Portobello Mushroom with Spinach & Brie Risotto topped with Porcini Balsamic Glaze. This is a super simple and filling dinner. Just roast your portobello mushroom in a 350° oven with salt, pepper, and oil. Cook for about 15 mins or until tender. In honor of my Birthday today I present to you a Vegan panna cotta with matcha green tea powder. 14 oz can of coconut milk 3 tbsp agave 1 tsp agar 1 tsp vanilla extract Place all ingredients in a pot and bring to a boil with stirring constantly then lower heat to simmer for 2-3 minutes still stirring.
