I made my delicious Lentil Shepherd’s Pie. It is one of my favorite comfort foods. I used to order it often it at restaurants, but it was always so salty, oily, and full of unhealthy ingredients. It’s pretty easy to enjoy this dish in a much healthier way when you make it yourself. Hooray for tasty plants and healthy cooking! Ingredients: • 1/2 large onion, diced • 1/2 cup mushrooms, sliced • 3 garlic cloves, minced • 2 large carrots, chopped • 1 celery stalk, chopped • 1/2 bell pepper, chopped • 1.5 cups green beans, chopped • 1.5 cups frozen corn • 1.5 cups frozen peas • 1 tsp rosemary • 1 tsp garlic powder • 1 bay leaf • 1.5 cups uncooked brown (or green) lentils • 6 ounce can tomato paste • 8 medium potatoes • 1/2 cup plant-based milk Instructions: 1. Sauté onion, mushrooms, garlic, carrots, and celery, adding water as needed. 2. Stir in lentils, green beans, bell pepper, water, rosemary, garlic powder, tomato paste and a bay leaf. Bring to a boil, then simmer for 30 minutes. In the last 10 minutes, remove the bay leaf and add the frozen corn and frozen peas. 3. Meanwhile, cook the potatoes, add milk, and mash. 4. Pour the lentil-veggie mixture into a 9x13 dish. Top with the mashed potatoes. 5. Bake at 350 F (177 C) for 25 minutes. Let cool for 10 minutes, then serve with green onions, black pepper, and/or hot sauce.
