Pad Thai made easy!
Ingredients:
2-3 Tbsp vegetable oil
2 Cloves of garlic
3 eggs
Protein - tofu, chicken, shrimp or beef
Rice noodle
Your favorite Pad Thai sauce
green onion, diced
1 Green pepper, diced
4 Roma tomatoes, diced
First soak the rice noodles in water for 15-20 minutes. Use this time to prep the other ingredients. Simmer garlic in a 2 tbsp of vegetable oil over medium heat.
Next add the eggs and which ever meat or tofu you may be using. Fry until both are cooked and push to the side of the wok.
Next add a little more vegetable oil then the drained noodles. Be sure to keep the noodles moving while they cook.
Add water as needed to keep them from sticking to the bottom of the pan. Add water in small amounts and keep turning and moving the noodles until they reach the desired softness. Getting the noodles done correctly is the hardest part of this dish. It may take some time, but it's very important to keep the noodles moving and prevent them from sticking to the bottom of the wok. Your arm will get a work out with this dish.
Next mix the egg and protein back in with the noodles, then add the green onion and a small amount of sauce.
Start with just 2-3 tbsp of sauce and test to see if the flavor is strong enough. Add more if necessary, then add the remaining ingredients. Normally, I just add green onion, green pepper, and tomatoes.
