A refreshing and nutritious salad that combines the creaminess of avocados, the zesty flavor of citrus fruits, the crunch of oat croutons, and a creamy buttermilk drizzle. Perfect for a light and healthy meal!
Ingredients: 2 ripe avocados, sliced. 2 cups mixed greens e.g., spinach, arugula, and lettuce. 1 grapefruit, peeled and segmented. 1 orange, peeled and segmented. 1/2 cup cherry tomatoes, halved. 1/4 cup red onion, thinly sliced. 1/4 cup roasted almonds, chopped. 1/4 cup old-fashioned oats. 2 tablespoons olive oil. Salt and pepper to taste. For the Buttermilk Drizzle:. 1/4 cup buttermilk. 2 tablespoons Greek yogurt. 1 tablespoon fresh lemon juice. 1 teaspoon honey. 1/4 teaspoon Dijon mustard. Salt and pepper to taste.
Instructions: Set the oven to 350F 175C and heat it up. Put the oats in a small bowl and add salt and pepper. Toss them with 1 tablespoon of olive oil. Spread them out on a baking sheet. Bake for 10 minutes, stirring every now and then, until they turn golden brown. To make oat croutons, take them out and let them cool. In a different bowl, mix the buttermilk drizzle ingredients with a whisk until the mixture is smooth. Add more salt and pepper to taste. Put away. Slice the avocado, cut up the grapefruit and orange, add the cherry tomatoes, red onion slices, and roasted almonds to a large salad bowl. Pour the buttermilk dressing over the salad, and then gently toss it to cover everything. Just before you serve the salad, sprinkle the oat croutons on top of it. Have the Avocado Citrus Crunch Salad right away and enjoy it!
